🛒 Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups frozen corn
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
👩🍳 Instructions
- Layer the base: Place the chicken breasts at the bottom of your crockpot.
- Add vegetables: Top the chicken with corn, chopped onion, minced garlic, and diced potatoes.
- Pour and season: Add the chicken broth and sprinkle in the thyme, paprika, salt, and pepper.
- Slow cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
- Shred the chicken: Remove the chicken breasts, shred them with two forks, and return the meat to the pot.
- Add cream: Stir in the heavy cream and cook on HIGH for an additional 15–20 minutes, allowing the chowder to thicken.
- Serve: Ladle the chowder into bowls, garnish with chopped parsley, and serve hot.
