🛒 Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups frozen corn
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

  1. Layer the base: Place the chicken breasts at the bottom of your crockpot.
  2. Add vegetables: Top the chicken with corn, chopped onion, minced garlic, and diced potatoes.
  3. Pour and season: Add the chicken broth and sprinkle in the thyme, paprika, salt, and pepper.
  4. Slow cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
  5. Shred the chicken: Remove the chicken breasts, shred them with two forks, and return the meat to the pot.
  6. Add cream: Stir in the heavy cream and cook on HIGH for an additional 15–20 minutes, allowing the chowder to thicken.
  7. Serve: Ladle the chowder into bowls, garnish with chopped parsley, and serve hot.
